Day 4: a brief summary

Not much to report today - I ate as follows:

Breakfast




Lunch

  • Salad: pomegranate, carrot, lettuce, rocket, tomatoes, mangetout, mixed seeds
  • Balsamic and olive oil dressing, seasoning
  • 1 apple

* Need to make sure I have time to make eggs at lunch / prepare another source of protein!

Snack
  • Raw almonds
  • Red grapes

Tea

Well this bit deserves a little more than a cursory bullet point list.  This was the best meal I've made on the challenge so far.  And totally challenge compliant!!

We eat fajitas/mexican stuff probably about 3 x a month, because its quick and easy, and also very tasty.  But of course these delicious dishes are usually based around a fairly large quantity of wheat/corn products ie wheat flour wraps, corn tortillas, corn chips.. etc

I would usually eat a meat substitute in my wraps (not allowed on this challenge), and in addition, I noticed that the spice mix we usually use includes sugar.  Balls.

So I basically remade our usual fajitas, MINUS THE CRAP. 
  • Home blended spice mix: chilli powder, sea salt, cumin, garlic powder, oregano, cinnamon, nutmeg, coriander (ground and fresh), cayenne pepper, smoked paprika, lemon juice, lime juice
  • Flash fried peppers, onions and asparagus
  • Home made guacamole: avocado, red chilli, onion, tomato, lime juice, coconut cream, coriander, seasoning
  • Salsa: tomato, onion, chilli, coriander, seasoning
  • Refried beans: kidney beans and butter beans with tomatoes, blended spice mix (above)
  • Omelette: with sundried tomatoes and mexican spice mix (above), cut into strips
But what did I do for wraps, you ask??  Why....

  • Delicious steamed savoy cabbage leaves, of course!!



..aaaand DEVOUR!


Not gona lie, and no time for modesty - this was MEGA.  Lovely two-handed "wraps" stuffed with delicious flavours and textures.

Really pleased with myself (can you tell??).  I didn't even miss the cheese (!!).  This one will be making a reappearance I'm sure.

Also of note: had a big 14 fruit and veg count today (happy with this!)   :)
